Cowboy Cookies

The first time I had a Cowboy Cookie I lived in Tallahassee and would drive through Sopchoppy to get to St. George island. There was a little pink house that was a family bakery, I think it was called Scratch Cake Bakery. Their cowboy cookies were amazing!


1 cup soft butter

1 cup sugar

1 cup brown sugar

2 eggs

1 tsp vanilla extract

2 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

1/2 tsp baking powder

2 cups rolled oats

1/2 cup pecan pieces

6 oz chocolate chips

1/2 cup shredded toasted unsweetened coconut


Preheat oven to 350 degrees.

In a large bowl - electric mixer - cream butter and sugars. Add eggs and vanilla until well blended.

Stir in flour, soda, salt, and powder.

Add oats, nuts, chocolate chips, and coconut. Mix until combined.

Spoon cookie mixture onto lined cookie sheet.

Bake for 8 to 10 minutes.

Let cool on a wire rack.
